These thick, chewy peanut butter Oreo blondies have bold peanut butter flavor and are packed with Oreos. Like a peanut butter cookie and an Oreo combined — they’re dangerously easy to make! 
These peanut butter Oreo blondies are a cousin to my Oreo brownies and Oreo chocolate chip cookie bars. You get dense, chewy blondies loaded with Oreo cookies in every bite. They’re thick, rich with peanut butter, and comforting — essentially a peanut butter cookie and an Oreo in one bar.
The idea for these bars comes from an old favorite snack shared with a longtime friend. Years ago she spread peanut butter on top of an Oreo for an after-school treat — brilliant and simple. This recipe builds on that idea and only requires a little extra effort to turn the combo into a baked bar that satisfies any dessert craving. 
To make the bars, start by combining melted butter, brown sugar and peanut butter until smooth. Beat in the eggs and vanilla, then fold in the flour and salt. The dough comes together quickly — under 10 minutes. There’s no baking powder or baking soda in this recipe on purpose: leaving out leaveners produces dense, chewy blondies rather than light, cake-like bars.
Assembly is straightforward. Pro tip: lightly grease the pan before lining it with parchment so the paper stays put and the batter spreads more easily.
- Spread about half of the peanut butter blondie batter into the bottom of the prepared pan to form an even layer.
- Arrange a layer of Oreo cookies over the peanut butter layer and press them down lightly.

- Spoon dollops of the remaining dough over the Oreos.
- Carefully spread the dough to cover the Oreos completely so the top is smooth.

Dropping spoonfuls of dough across the Oreo layer instead of dumping it all in one spot makes it much easier to cover the cookies evenly.
Bake in a preheated oven for about 23–27 minutes, or until the top looks set and a toothpick inserted in the center comes out clean or with a few moist crumbs. Exact bake time depends on your oven and how gooey you prefer the blondies.
For clean slices like the photos, let the bars cool completely before cutting. It’s tough to wait, but cooling makes for neater pieces.

- 1/2 cup unsalted butter (112 grams), melted
- 1 1/2 cups brown sugar (158 grams), light or dark
- 2/3 cup peanut butter
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 1/2 cups all-purpose flour (188 grams)
- 1/4 teaspoon salt
- 18 Oreo cookies
Instructions
- Preheat the oven to 350°F (180°C).
- Lightly grease an 8×8 inch (20×20 cm) pan and line it with parchment paper, leaving an overhang. Greasing first helps the parchment stay in place.
- In a large bowl, whisk together the melted butter, brown sugar and peanut butter until smooth.
- Beat in the eggs and vanilla until combined.
- Fold in the flour and salt just until no streaks of flour remain.
- Spread about half of the batter evenly into the prepared pan.
- Arrange a layer of Oreos on top of the batter, pressing them down slightly (for example, four rows of four).
- Drop spoonfuls of the remaining batter over the Oreos so it’s distributed across the pan.
- Smooth the top with a flat knife so the cookies are completely covered.
- Bake for 23–27 minutes, until the top is set and a toothpick comes out clean or with a few moist crumbs. Bake time varies by oven and desired gooeyness.
- Cool completely for clean slices. Lift the bars from the pan using the parchment overhang and cut with a sharp knife.
Notes
- Peanut Butter: Use commercially prepared smooth peanut butter. Avoid natural or homemade peanut butter where oil separates, as results can be inconsistent.
- Storage: Store in an airtight container at room temperature for up to 4 days. Bars freeze well for up to 2 months; thaw in the fridge.
