- ½ cup breadcrumbs, or 2 tbsp amaranth flour for a gluten-free option (optional)
- ½ tsp cayenne powder (or to taste)
- ½ tsp garam masala
- ½ tsp green mango powder (amchur) or a squeeze of lemon for tang
- Salt to taste
- 1 tbsp finely chopped cilantro and mint leaves
How to Make Plantain Patties — Step by Step:
1. Boil the potatoes and plantains together until tender. Allow them to cool, then peel and mash thoroughly in a large bowl.
2. Add the ginger and green chilli pastes, cayenne, garam masala, green mango powder (or lemon), salt, roasted crushed peanuts, and the chopped cilantro and mint. Mix everything well so the spices and herbs are evenly distributed.
3. If the mashed mixture feels sticky or damp and doesn’t hold together easily, add a little breadcrumbs or amaranth flour to bind it. Hold back on the binding agent at first — you may not need much if the mash is firm.
4. With slightly moistened hands, shape the mixture into thin, round patties. Make them uniform in thickness so they cook evenly.
For Air Frying
Preheat your air fryer to 200°C (390°F) for about 5 minutes. Lightly brush or spray oil on the basket to prevent sticking.
Arrange the patties in a single layer without overlapping. Lightly brush the tops with oil.
Air fry at 200°C (390°F) for about 15 minutes, or until the patties are golden and crisp on the outside. Turn them once halfway through cooking and brush lightly with oil if needed to help them brown evenly.
Serve hot with a dip, ketchup, or chutney.
For Pan Frying
Heat a non-stick tava or griddle over medium heat and add a teaspoon or two of oil. Cook the patties until a crunchy brown crust forms, about 2–3 minutes per side depending on thickness. Use low to medium heat so the patties cook through without burning on the outside.
These patties are best served hot as an evening snack with tea and your favorite chutney or sauce.

- If the mixture is too soft, add breadcrumbs or amaranth flour to help bind it. Add gradually until it holds shape.
