The ultimate Veggie Burger with Falafel Seasonings and Lemon-Tahini Sauce

If you want a veggie burger that’s packed with flavor and sturdy enough for the grill, this recipe delivers. It begins with meaty portobello mushrooms, whose rich, earthy texture makes them an excellent base. Combined with chickpeas and brown rice, these patties gain lean protein and a binding texture that resists falling apart on the grill. The mixture is versatile — it forms firm burgers and can also be shaped into meatballs and roasted with a touch of extra virgin olive oil.
For a bright Middle Eastern note, I’ve added classic falafel seasonings: parsley, cumin, coriander and lemon zest. The burgers are finished with a creamy Lemon-Tahini Sauce that complements the savory patty.
