Start with cooked, shredded chicken. You can buy pre-shredded chicken, pull meat from a rotisserie bird, or cook and shred your own. Two convenient methods are the Instant Pot and the slow cooker, both of which yield tender, shreddable chicken with minimal effort.

How to Make Shredded Chicken

Slow Cooker Method:

  1. Place chicken breasts and ¼ cup water in the slow cooker. Season with salt and pepper.
  2. Cook on high for about 2 hours, until fully cooked. Remove and shred with two forks.

Instant Pot Method:

  1. Place chicken breasts and ¼ cup water in the Instant Pot. Season with salt and pepper.
  2. Cook on Manual High Pressure for 12 minutes.
  3. Let the pressure naturally release for 5 minutes, then quick release the remaining pressure. Remove and shred with two forks.

Greek yogurt keeps this buffalo chicken light and creamy while reducing calories compared with recipes that rely on mayonnaise, sour cream, or heavy cheeses.
