I love a good burrito, but I’ve always balked at spending 200–500 calories on a tortilla. Combine that with my habit of using whatever’s already in the fridge, and you can see why chicken burrito bowls are one of my go-to meals.

Are burrito bowls healthy?
Removing the tortilla cuts a lot of starch and calories, but whether a chicken and rice burrito bowl is “healthy” depends on what you add. Pile on cheese and sour cream and it becomes indulgent; load up on lettuce, avocado, and fresh pico and it’s lighter and more balanced. The version in this recipe strikes a middle ground—satisfying without going overboard.

Easy chicken burrito bowl recipe
This is a flexible recipe meant to be customized. No pico? Use salsa or diced tomatoes with a squeeze of lime. Half an avocado that’s starting to brown? Slice it and use it. Don’t stress—think of this as guidance for building a bowl you’ll enjoy.
Start with a base of rice and beans, add greens and seasoned grilled chicken, and finish with your preferred toppings—cheese, sour cream or Greek yogurt, pico or salsa, and guacamole if you like. A lime wedge brightens everything.

Chicken Burrito Bowl Meal Prep
These bowls are excellent for meal prep. Make cilantro lime rice and grill cilantro lime chicken, then assemble bowls in meal prep containers with your favorite toppings. Store them in the fridge for easy lunches or dinners all week.

Chicken Burrito Bowl

Ingredients
- ½ cup rice Cilantro Lime Rice is my favorite – see link above
- ¼ cup black beans
- 1 dash cumin
- ¼ cup shredded romaine
- 1 grilled chicken breast Cilantro Lime Grilled Chicken preferred, but plain grilled chicken works too.
- 1 Tablespoon pico de gallo
- 2 Tablespoon shredded cheese Pepper jack or extra sharp cheddar suggested
- 1 Tablespoon sour cream Feel free to substitute Greek yogurt
- 2 Tablespoons guacamole optional
- 1 lime wedge
Instructions

In a medium bowl, mix the black beans with a dash of cumin. Scoop the beans to one side and add the rice to the other side. Layer romaine and the grilled chicken breast on top.

Top with pico de gallo, shredded cheese, and sour cream. Add guacamole if desired and serve with a lime wedge.
