Ingredients
For the marinade
- 4 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 tablespoons gyros spice mix
- 4 cloves garlic, finely chopped
- 1 red bell pepper, cut into small cubes
- 1¼ pound schnitzel, cut into thin strips
For the filling
- tortilla wraps
- 2 red onions, finely chopped
- iceberg lettuce, finely sliced
- cherry tomatoes, halved
- feta cheese, crumbled
For garnish
- fresh mint leaves, finely chopped
Recipes include both Metric and US Customary measurements. Choose the unit system you prefer.
Instructions
Prepare Gyros
- Combine the olive oil, lemon juice, gyros spice mix, garlic and red bell pepper in a bowl.
- Add the meat and mix well so every piece is coated with the marinade.
- Heat a little oil or butter in a frying pan over medium heat.
- Add the meat and cook until browned. Add the red onions and continue cooking 5–7 minutes until the meat is cooked through and the onions are soft.
Build the wraps
- Place the tortillas on plates. Add lettuce and cherry tomatoes, then spoon the warm meat over the top.
- Finish with crumbled feta and chopped mint.
Notes
2. Don’t have gyros spices? Use a simple mix of oregano, paprika, garlic powder, onion powder, salt and pepper, or use a ready blend if you prefer.
3. Freezing: Freeze only the cooked meat for best results; assemble wraps fresh to keep the tortillas soft.
4. Extra flavor: Marinate the meat for up to three hours for deeper flavor.
5. Storage
- Fridge: Store leftovers in a sealed container for up to 3 days.
- Freezer: Cool the meat, then freeze in a container for up to 3 months. Thaw in the fridge and reheat before serving.
