Summer is on my mind: fresh food, sunshine, beach days and the relaxed feeling that comes with warmer weather. I’m not saying I’m fully summer-ready, but I’m definitely craving lighter, fresher meals — like this green smoothie bowl.

I love summer for so many little reasons. It’s the season for easy, vibrant food that makes you feel good from the inside out. This smoothie bowl fits that bill: it’s simple to make, packed with nutrients, and perfect for breakfast or a snack.

This bowl may look fancy, but it’s easy to assemble. Smoothie bowls can feel a bit odd at first, yet they’re a great option for people who prefer lighter breakfasts or want a nutrient-dense snack. The creamy base gets topped with fruit, nuts and coconut for texture and extra flavor.

When I first photographed this bowl I joked that the coconut flakes looked like dandruff — but they’re just coconut flakes, and they add a lovely touch. I arranged the toppings by hand: sliced strawberries, chopped almonds and coconut flakes. You can style it however you like.

I made two versions. Both felt energizing and satisfying. Version 1 is sweeter and smoother, while Version 2 is chunkier and less sweet — it uses half a banana and adds walnuts for extra healthy fats and texture. If you want the less sweet, slightly more nutritious option, choose Version 2 with walnuts.

Ingredients

Version 1:

  • 1 small banana, peeled
  • 1 kiwi, peeled
  • 1 cup spinach, washed
  • 1/4 cup cucumber, cubed
  • optional: ground ginger + cinnamon (1/2 tsp each)

Version 2 (chunkier, less sweet):

  • 1/2 small banana, peeled
  • 2 tbsp chopped walnuts
  • 1 kiwi, peeled & chopped
  • 1/4 cup cucumber, cubed
  • 1 cup spinach
  • optional: ground ginger + cinnamon (1/2 tsp each)

Toppings:

  • 3 strawberries, sliced
  • 5 chopped almonds
  • 1 tsp coconut flakes

Instructions

  1. Blend ingredients for Version 1 or Version 2 using a hand blender until smooth.
  2. Pour the smoothie into a bowl and top with sliced strawberries, chopped almonds and coconut flakes or shavings.

Notes

You can use a countertop blender instead of a hand blender; add a splash of almond milk or water to help it blend. This may change the thickness of the smoothie.
