This deeply spiced slow-braised red cabbage with apple and balsamic vinegar is an easy vegan and gluten-free side dish to keep in your repertoire. It’s ideal for cold winter days alongside a vegetable pot pie and a layered potato bake, or served with a festive Christmas dinner. It reheats well and can be made ahead and frozen or refrigerated until needed—perfect for stress-free entertaining.

This is one of my favourite Christmas sides: full of warming spices and a beautiful deep purple colour that lifts any plate. The scent while it cooks fills the house with festive aromas.
Braised red cabbage has its roots in German cuisine and is commonly served across Europe, especially at Christmas in the UK. The cabbage soaks up flavours from spices, red onion, apple, red wine and balsamic vinegar, creating a complex and comforting dish. This version avoids refined sugar; the balsamic vinegar and date syrup provide the perfect balance of sweet and tangy.

Ingredients
- Red cabbage – finely shredded. Do not substitute with green cabbage; the flavour and colour will be different.
- Apples – peeled, cored and grated on a coarse grater. If you prefer, dice the apple small instead of grating.
- Red onion – red onion complements the cabbage colour; brown onion can be used in a pinch.
- Red wine – optional. Replace with apple juice for an alcohol-free version. The alcohol cooks off during simmering.
- Date syrup – I use date syrup, but maple syrup or brown sugar are suitable substitutes.
- Balsamic vinegar – provides sweetness and acidity for balance.
- Spices – nutmeg, allspice, cinnamon and cloves. These warm spices make the dish sing.
- Olive oil – stirred in at the end for a glossy, rich finish. Omit for an oil-free version.
- Salt and pepper – to taste.

Basic Instructions
This dish benefits from slow, steady cooking. It requires little attention but does need time to soften and develop flavour.

Step One – Thinly slice the red cabbage and red onion, and grate the apple.

Step Two – Put the red cabbage, grated apple, red onion, red wine (if using) and water into a heavy-based saucepan. Cover and simmer over low heat for 1 hour, stirring occasionally.
You can also cook this in the oven or a slow cooker if preferred.

Step Three – Stir in the date syrup (or maple), balsamic vinegar and spices. Season, replace the lid and cook for another 30 minutes, stirring occasionally to prevent sticking.

Step Four – When the cabbage is very soft and the flavours are combined, adjust seasoning and stir in the olive oil for a glossy finish. Serve warm.

To reheat from frozen, defrost overnight in the fridge, cover with foil and warm in the oven at around 180°C/350°F for about 30 minutes, or until piping hot throughout. Stir in the olive oil just before serving to restore gloss and flavour.

Leftovers
Leftover braised red cabbage is versatile: add to a stir fry, toss with leftover roast potatoes and a pinch of chilli to make a spiced hash, or mix into a warm grain salad. It can also be turned into a chutney if you want to experiment with preserving the flavours.

Raw red cabbage stores for weeks in the fridge. Once cooked, this braised red cabbage will keep in the fridge for 3–4 days or in the freezer for up to a month.
Defrost overnight in the fridge. Reheat covered in the oven at 180°C/350°F for about 30 minutes, check that it is hot in the middle, then stir in a tablespoon of olive oil before serving.

Ingredients
- ½ red cabbage (220g)
- 1½ apples (100g)
- 1 red onion (70g)
- 40 ml red wine (optional)
- ½ cup water (120 ml)
- 1 tablespoon date syrup (or maple syrup)
- 1 teaspoon balsamic vinegar
- ½ teaspoon grated nutmeg (or to taste)
- ½ teaspoon ground allspice (or to taste)
- ½ teaspoon ground cinnamon (or to taste)
- ¼ teaspoon ground cloves (or to taste)
- 2 tablespoons olive oil (optional)
- Salt and pepper to taste
Instructions
- Shred the red cabbage, grate the apple and dice the red onion.
- Place the cabbage, apple, red onion, red wine (if using) and water in a heavy-based saucepan. Stir well, cover and cook over low heat for 1 hour, stirring every 10–15 minutes. Add a splash of water if it becomes too dry or starts to stick.
- After 1 hour, when the cabbage is soft, stir in the date syrup, balsamic vinegar and spices. Season to taste. Cover and continue to cook for another 30 minutes, stirring occasionally and adding a little water if needed.
- Once very soft and well flavoured, adjust seasoning. Stir in the olive oil for a glossy finish if desired. Serve warm.
