Look, they LOOK (and are) super crunchy, right?

Some time ago — in this post — I mentioned planning meals. I said I usually don’t do full meal plans unless I’m staying with my boyfriend for a week. Well, I’ve decided it’s time to take meal planning seriously.
I often spend my days working on projects and lunch can catch me off guard. I want to stop being disorganized. For me, poor planning ends up meaning I eat less than I should or choose unbalanced meals. Balance and good-quality ingredients are what matter most to me.
I recently finished Marie Kondo’s book, “The Life-Changing Magic of Tidying Up” (I liked it!), and it inspired me to tidy up other parts of my life — healthy eating included. I was already mindful about food, but I realized I needed more structure.

Why the introduction? Yesterday I took about half an hour to plan all my meals for the week. Vegetables aren’t my favorite, so I started there. I checked what’s in season and jotted down ideas, then moved on to proteins, fats and carbs. It was simpler than I expected: no elaborate dishes, just straightforward, wholesome ingredients.

Of course I included snacks in the plan — like these oven-baked beetroot chips. A life-changing snack! I had a few beets in the fridge and thought, “Why not make them crispy instead of grating them into a salad?” They’re addictive and I can’t do without them now. To me, they’re the perfect snack.

Great for kids too!

Many readers are women aged 25–34, so you might have children. These beetroot chips are ideal for little ones: quick to prepare (they roast in the oven) and nutritious. Definitely better than many store-bought snacks.
While I was photographing the chips, my youngest nephew — three and a half — came over and asked, “Auntie, what are those? Can I have one?” (He has a cute lisp and it always makes me smile.) We ended up eating them together on the couch. I love moments like that.

CHIPS DI BARBABIETOLE

A simple, healthy snack: oven-baked beetroot chips with a pinch of salt!

Ingredients

  • 700 gr Red beetroots(about three)
  • a pinch Salt
  • about 3 tbsp Extra virgin olive oil
  • 2 tsp Apple cider vinegar(optional)

Instructions

  • Preheat your oven to about 150°C (fan). If using a conventional oven, bake for 45–50 minutes.
  • Rinse the beetroots under running water and dry them thoroughly.
  • Trim the ends and slice the beets very thinly with a mandoline or slicer, about 1.5–2 mm thick.
  • Place the slices in a large bowl and toss with oil, vinegar (optional) and salt until evenly coated.
  • Let them rest for 20 minutes so they release excess liquid.
  • Line three baking sheets with parchment paper and arrange the slices in a single layer. Alternatively, bake in batches.
  • Bake for about 30 minutes, checking for browning. The chips will crisp as they cool.
