Summer is winding down, and this blackberry mint pizza is the perfect way to savor the season. With subtly sweet mascarpone, juicy blackberries, and a smear of blackberry jam, it works beautifully for brunch, a light dessert, or afternoon coffee. Bread, cheese, fruit, and fresh herbs come together for a beautifully balanced treat that’s picnic-ready without the packing.

It’s simple to assemble. The only real difficulty is waiting for it to cool enough to slice cleanly—cheese and jam can be a little unruly when warm. But the payoff is worth it: warm berries and creamy cheese are irresistible.

If you’re tempted, making an extra pizza to enjoy while you wait for the “pretty” one is a perfectly valid plan. Fresh, warm blackberries alongside soft mascarpone make for a delightful indulgence.
Savory Blackberry Mint Pizza
- 8 oz mascarpone cheese, room temperature
- ¼ teaspoon vanilla
- ¼ teaspoon salt
- 8 oz blackberries
- Small jar blackberry jam (seeded jam adds nice texture)
- 1 medium pre-made thin pizza crust with garlic and herbs
- 1 tablespoon mint leaves, thinly sliced
- Grated lemon zest
- Pizza stone (optional but recommended)
Preheat the oven to 450°F with a pizza stone inside. If you don’t have a stone, a pizza pan will work and doesn’t need preheating.
A pizza stone mimics the heat of a brick oven: its porous surface absorbs moisture from the crust for a crispier result, and it distributes heat evenly so the crust bakes uniformly. Food also releases easily from a well-seasoned stone, and cleanup is simple with warm water and mild soap.

Fold the vanilla and salt into the mascarpone until smooth. A hand mixer works well, but be sure the cheese is at room temperature—mascarpone can curdle if it’s too cold or mixed too aggressively. If it starts to separate, a quick pulse with an immersion blender can bring it back together. Set the sweetened mascarpone aside.

Use the back of a spoon to spread a thin layer of blackberry jam over the prepared pizza crust. A savory crust with light garlic and herbs pairs nicely with the sweetness, adding a subtle dimension that complements the fruit and cheese.

Spread about half of the mascarpone mixture over the jam. Reserving some cheese keeps the balance of flavors and textures bright and light. If you end up making two pizzas, you’ll have just enough for both.

Top the pizza with a generous handful of fresh blackberries.
Scatter the thinly sliced mint over the top. To chiffonade mint, stack several leaves, roll them tightly, and slice thinly to create delicate ribbons. This technique works beautifully with basil as well and prevents bruising the herbs while cutting.

Finish with a light dusting of lemon zest to brighten the flavors. Transfer the pizza to the preheated stone in the oven and bake 5–8 minutes, until the crust is crisp and the toppings are warmed through. Remove from the oven and let the pizza cool completely before slicing so the mascarpone and jam set and won’t slide when cut.
