Ingredients

For the bars:

  • 1 cup granulated sugar
  • 1 Tbsp. orange zest (about 1 orange)
  • 1 cup dark brown sugar, packed
  • 1 cup unsalted butter, melted and slightly cooled
  • 2 large eggs
  • 1 Tbsp. vanilla extract
  • 2 1/4 cups all purpose flour
  • 1 tsp. baking powder
  • 1 tsp. cornstarch
  • 1 tsp. salt
  • 1/4 tsp. ground cinnamon (or ginger)
  • 1 cup white chocolate chips
  • 1 cup dried cranberries

For the frosting:

  • 1 cup white chocolate chips
  • 1 Tbsp. coconut oil
  • 8 oz. full-fat cream cheese, softened
  • 1 1/2 cups powdered sugar, or more as needed
  • 1 Tbsp. orange zest
  • dried cranberries, roughly chopped (for garnish)

Instructions

  • Preheat oven to 350°F. Line a 9×13-inch baking dish with parchment paper.
  • Combine granulated sugar and orange zest, rubbing them together to release the oils and infuse the sugar with orange flavor.
  • Add brown sugar and mix. Pour in melted butter and whisk until a cohesive paste forms, about 1 minute.
  • Whisk in eggs and vanilla until combined.
  • Stir in dry ingredients (flour, baking powder, cornstarch, salt, and cinnamon) just until combined. The batter will be thick.
  • Fold in white chocolate chips and dried cranberries.
  • Spread batter evenly in the prepared pan and bake 23–25 minutes or until golden and a toothpick comes out mostly clean. Cool completely.
  • Melt white chocolate chips with coconut oil until smooth. Beat cream cheese, powdered sugar, and orange zest until smooth, then mix in half of the melted white chocolate.
  • Spread frosting over cooled bars. Sprinkle chopped dried cranberries on top and drizzle with remaining melted white chocolate. Add extra orange zest if desired.
  • Allow the white chocolate to set. For neat slices, refrigerate the frosted bars for about 30 minutes, then cut with a sharp knife and serve.
