I grew up eating the frozen tots from the bag—oven baked or sometimes deep fried. Air frying tater tots gives the same satisfying crunch with much less fat and lets you use healthier oils like avocado or olive oil.
Making tots from scratch is surprisingly simple and the texture and flavor are far superior to processed frozen versions. Once you try homemade, you might not go back.

How to Make Tater Tots
- Peel 1½ pounds of russet potatoes. Russets work best for tots and fries.
- Fill a saucepan about ¾ full with cold water and bring to a boil over medium-high heat.
- Add the potatoes and parboil for 6–12 minutes (see note below).
- Drain and let the potatoes cool for about 10 minutes.
- Use a cheese grater to grate the cooled potatoes. Squeeze out any excess moisture.
- In a bowl, combine grated potatoes with 2 teaspoons all-purpose flour, salt, pepper and any optional seasonings. Mix well.
- Form the mixture into tots by hand. This recipe yields about 16 larger tots; make them smaller if you prefer more pieces.
- Spritz or brush both sides of each tot with cooking oil and arrange in a single layer in the air fryer basket.
- Air fry at 400°F (204°C) for 10 minutes, flip, then cook an additional 5 minutes or until golden and crisp.

What is Par Boiling? How to Par Boil
Parboiling softens the outside of potatoes so they grate easily while the interior stays slightly firm. Because potatoes are high in starch, they take longer to cook; parboiling shortens the final cook time and helps the tots hold together.
To parboil: add cold water to a pot, bring to a boil, then add whole or halved potatoes and simmer 6–12 minutes. The exact time depends on pot size and heat; a fork should pierce the outer layer easily while the center remains firm. Drain and cool before grating.

How Long to Cook / Cook Time
Fresh homemade tots: about 15 minutes at 400°F. Flip halfway through. If you like extra crunch, add a few more minutes, keeping an eye on them. Cook times vary by air fryer model.

How to Keep Them Crispy
Lightly spritz or brush tots with oil before cooking (olive or avocado oil works well). For an extra crispy exterior, extend the final cook time by a few minutes and avoid overcrowding the basket so hot air circulates freely.

Frozen Tater Tots
If you freeze homemade tots, cook them from frozen for about 3–5 minutes extra at 400°F.
Bagged store-bought frozen tots usually take 15–20 minutes at 400°F—follow the package for best results and shake or flip halfway through cooking.


Recipe Tips
- Grate the potatoes instead of mashing. Grated potatoes bind and form tots much better.
- Season generously before cooking—russet potatoes are mild. If under-seasoned, add salt to the dipping sauce or spritz cooked tots with oil and salt immediately after air frying.
- If you skip parboiling, expect longer cook times and a coarser texture that’s harder to shape.
- These tots freeze well in sealed bags. Cook from frozen with a few extra minutes at 400°F.
