Instructions

  • Combine the rice wine vinegar, sugar, and salt in a small bowl. Pour the mixture over the cooked rice and fold gently until evenly seasoned.
  • Line a small square container with plastic wrap. Press the seasoned rice firmly into the mold so it holds together, then freeze for 1 hour to firm up.
  • While the rice chills, finely mince the salmon and stir together with mayonnaise, sriracha, sesame oil, and salt until creamy. Keep chilled until assembly.
  • Remove the rice block from the mold and plastic wrap. Cut into roughly 1-inch squares using a sharp knife.
  • Heat a nonstick pan over high heat. Add a little oil if desired and sear the rice cubes on all sides, flipping frequently, until each side is golden and crisp. Transfer to a wire rack to drain and keep crisp.
  • Top each crispy rice square with a spoonful of the salmon mixture. Finish with spicy mayo, eel sauce, sesame seeds, and a jalapeño slice if using. Serve immediately while the rice is still crisp.

Notes

I prefer short-grain rice for its sticky texture, but medium-grain rice will work if that’s what you have.
