How to make Lebanese lemon lentil soup

  • 1 large carrot (or 8 baby carrots), finely diced
  • 2 cloves garlic, minced
  • ½ teaspoon ground cumin
  • ¼ teaspoon turmeric
  • Pinch of cayenne pepper
  • 1 cup red lentils, rinsed
  • 3½ cups vegetable stock (or chicken stock)
  • ¾ teaspoon kosher salt (adjust to taste)
  • Zest and juice of 1 lemon
  • For garnish: chopped cilantro and extra virgin olive oil

Instructions

  1. Heat 2 tablespoons olive oil in a large pot over medium heat. Add the chopped onion and carrot and sauté until the carrot is soft and the onion is translucent, about 4–5 minutes.
  2. Meanwhile, rinse the lentils in a colander under cool running water.
  3. Add the minced garlic, ½ teaspoon cumin, ¼ teaspoon turmeric, and a pinch of cayenne pepper to the pot. Cook, stirring, for 30–60 seconds until fragrant.
  4. Add 1 cup red lentils, 3½ cups stock, and ¾ teaspoon salt. Bring to a boil, then reduce to a simmer. Cook 18–20 minutes, stirring occasionally, until lentils are tender and beginning to break down.
  5. Stir in the zest and juice of 1 lemon. Taste and adjust seasoning if needed.
  6. Ladle into bowls and garnish with chopped cilantro and a drizzle of olive oil. Top with crushed pita chips for texture if desired.

Notes

You do not need to soak red lentils before cooking—just rinse them to remove dust or debris. While the soup cooks, prepare accompaniments such as hummus, raw vegetables, and warm pita. To warm pita, wrap in foil and heat in a 350°F oven for 5–8 minutes or toast briefly.

Store leftovers in the refrigerator for up to one week. To freeze, portion into airtight containers or freezer bags and freeze for up to two months. Thaw overnight in the refrigerator and reheat gently on the stove.
