Pumpkin Chocolate Chip Bread

I know there have been a lot of pumpkin recipes recently, but I couldn’t resist sharing this one.

I almost didn’t post this Low Fat Pumpkin Chocolate Chip Bread today, but with Thanksgiving right around the corner I had to — this loaf is something I’m especially thankful for.

I usually make a favorite pumpkin chocolate chip bread recipe, but after buying a new cookbook I tried this version and fell head over heels. It’s incredibly moist, full of pumpkin flavor, perfectly spiced, and best of all, low in fat. This recipe uses just one tablespoon of oil instead of the typical 1/2 cup, yet the texture and taste are amazing.

If you tasted it blindfolded, you would never guess it’s a low-fat recipe. I may have eaten half the loaf myself — or more — but I kept reminding myself it’s lower in fat, so that counts, right? I can’t wait to bake it again.

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup canned pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup low-fat buttermilk
  • 1 egg
  • 1 tablespoon canola oil
  • 1/2 to 1 cup chocolate chips (I use 1 cup)

Instructions

  1. Preheat oven to 350°F (175°C). Spray a loaf pan with non-stick cooking spray.
  2. In a small bowl, whisk together the flour, baking soda, salt, cinnamon and nutmeg; set aside.
  3. In a large bowl, beat the pumpkin, brown sugar, buttermilk, egg and oil until combined.
  4. Add the dry mixture and stir just until moistened — do not overmix. Fold in the chocolate chips.
  5. Pour batter into the prepared pan. Bake 50–60 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for about 15 minutes before slicing.
