Ready to make your own Banana Coffee Cake?
• Preheat oven to 350°F (175°C). Lightly grease an 8×8 inch pan.
• In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt. Set aside.
• In a medium bowl, mash the bananas. Add sour cream, oil, egg, and vanilla; mix until combined. Stir the wet mixture into the dry ingredients until just combined.
• For the streusel: in a small bowl, combine flour, brown sugar, cinnamon, and melted butter until crumbly. Spread half the batter evenly into the prepared pan, sprinkle with half the streusel, pour the remaining batter over the streusel, and top with the remaining streusel.
• Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
• For the glaze: whisk powdered sugar, heavy cream, and vanilla until smooth. Drizzle over the warm cake, slice, and serve.

- 2-3 bananas, mashed, about 3/4 cup
- 1/2 cup sour cream
- 1/3 cup canola oil
- 1 large egg
- 1/2 teaspoon vanilla extract
For the streusel:
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 2 teaspoons ground cinnamon
- 1/4 cup melted butter
For the glaze:
- 1/2 cup powdered sugar
- 1-2 Tablespoons heavy cream
- 1/4 teaspoon vanilla extract
