Ingredients

  • 500 g new potatoes (or baby new potatoes)
  • 2 tablespoon olive oil
  • 2 tablespoon green pesto
  • 150 g radish
  • 80 g salad of choice
  • ½ medium lemon (juice and zest)

Instructions

  • Preheat the oven to 200°C and line a baking tray with parchment. Wash and dry the potatoes, then halve them. Toss the halves in 1–2 tablespoons of olive oil so they are well coated, place cut-side down on the tray and roast for about 20 minutes until golden.
  • When the potatoes are cooked, transfer them to a large bowl, add 1–2 tablespoons of pesto and toss to coat evenly.
  • Slice the radishes (or cut into matchsticks) and add them with your salad leaves to the potatoes. Finish with a drizzle of lemon juice and some zest. Toss gently and serve.
