Brown Gravy Meatloaf

Ingredients

  • 1 1/2 lbs Ground beef
  • 2 Eggs
  • 1 Onion, diced
  • 1/2 cup Milk
  • 1 cup Panko or bread crumbs
  • 2 TBS Dried parsley
  • 2 tsp Garlic powder
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 cup Parmesan, shredded

Brown Gravy

  • 4 TBS Butter
  • 2 TBS Dried onion (or 1/4 cup diced onion)
  • 4 cups Beef broth or stock
  • 2 TBS Corn starch
  • Salt, pepper, and garlic powder to taste

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, eggs, diced onion, milk, panko or bread crumbs, dried parsley, garlic powder, salt, pepper, and shredded Parmesan. Mix gently until just combined—avoid overworking the meat for a tender loaf.
  • Shape the mixture into a loaf on a rimmed sheet pan or press it into a lightly sprayed loaf pan.
  • Bake for 45 minutes to 1 hour, until the center is no longer pink and the internal temperature reaches about 160°F (71°C). Let the meatloaf rest for 5 minutes before slicing.
  • About 15 minutes before the meatloaf is done, prepare the brown gravy. In a medium skillet over medium-high heat, melt the butter and sauté the dried or diced onion until softened, about 2–3 minutes.
  • Add the beef broth and bring it to a gentle boil. Season with salt, pepper, and garlic powder to taste.
  • Make a slurry by whisking 4 tablespoons of the hot beef broth with the corn starch until smooth. Pour the slurry into the simmering broth and whisk until the gravy thickens. Add more slurry if you prefer a thicker consistency.
  • Serve the meatloaf sliced and spoon the brown gravy over it. The gravy is also excellent over mashed potatoes or fries. Enjoy.
