Smoky Keto Coffee Dry Rub BBQ Spice — better than the store-bought versions and sugar-free for low-carb grilling.

A bold, smoky-sweet coffee dry rub with a touch of orange — inspired by a popular spice blend but made keto-friendly.

This recipe was born from not finding a suitable low-carb coffee rub in stores. Many commercial blends rely on brown or white sugar, so I created a sugar-free version that keeps the same flavor profile without the carbs.

Which Spices Are Keto Friendly?

All spices contain some carbohydrates, and while the amounts are usually small, they add up if you’re tracking carbs closely. Be mindful of portions when following a strict low-carb plan.

This coffee dry rub is approximately 2 net carbs per tablespoon.

Ingredients Needed for Keto Coffee Dry Rub BBQ Spice

  • 2 tbsp ground coffee (choose a bold roast for deeper flavor)
  • 2–3 tbsp brown sugar substitute (e.g., a granular erythritol-based or allulose-based brown substitute). If not keto, coconut sugar or brown sugar can be used.
  • 1 tbsp smoked paprika
  • 2 tsp cumin powder (optional — it adds warmth and depth)
  • 2 tsp garlic powder or garlic flakes
  • 2 tsp onion powder or onion flakes
  • 2 tsp sea salt
  • Zest of a large orange (about 1 tbsp) for a bright citrus note

Trader Joe’s original coffee rub doesn’t include cumin, so omit it for a closer match. I prefer cumin for that earthy background flavor.

How To Use Your DIY Coffee BBQ Spice Rub

This versatile rub works on beef, pork, and chicken. Here are a few ways to use it:

  • Toss 2 lbs of chicken wings with 2–3 tbsp of the rub, then air-fry, bake, or grill until cooked through and crisp.
  • Pat the rub onto steaks before grilling or broiling for a rich, smoky crust.
  • For flank steak, coat evenly with the rub and refrigerate overnight or let come to room temperature, then grill to medium-rare (about 6 minutes per side depending on thickness).
  • For ribs, dry rub generously, then pressure-cook or slow-cook until tender. Finish under the broiler or on the grill, optionally brushing with a sugar-free BBQ sauce.
  • Use it on roasts, pork chops, or mixed into burger patties for extra complexity.

Ingredients

  • 2 tbsp ground coffee
  • 2–3 tbsp brown sugar substitute like Sukrin Gold (or preferred keto brown sweetener)
  • 1 tbsp smoked paprika
  • 2 tsp cumin powder (optional)
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp sea salt
  • Zest of large orange (about 1 tbsp zest)

Instructions

  1. Combine all ingredients in a small bowl, breaking up any clumps so the mix is uniform.
  2. Pat or rub the spice mix onto your meat of choice. For wings, toss 2 lbs with 2–3 tbsp rub and cook by air-fryer, oven, or grill. For steaks and larger cuts, apply generously and let sit for at least 30 minutes or refrigerate overnight for deeper flavor.

Notes

About 2 net carbs per 2 tablespoons of rub. Store in an airtight container for up to 3 months.
