I crushed graham crackers, stirred together cheesecake-flavored instant pudding, and layered everything in cups. The result: creamy, fruity parfaits with a crunchy graham base. They’re similar to other no-bake desserts I make with canned pie fillings, but the strawberry flavor felt like a fresh change.

How to Make Parfaits

First step — make the graham cracker crumbs (or use pre-made crumbs).

Pulse graham crackers in a food processor or blender until fine, then mix in the melted butter until crumbs are moistened.

Then make the pudding.

Whisk the instant cheesecake (or vanilla) pudding mix with cold milk until thickened, following the package instructions.

Next — assemble!

Layer graham cracker crumbs in the bottom of each cup, add a layer of pudding, then spoon in strawberry pie filling. Finish with a dollop of whipped topping.

How long will these parfaits last?

Stored covered in the refrigerator, they are best within three days. After that, the graham cracker layer may soften and lose its crunch.
