I had a can of strawberry pie filling to use and, with two kids keeping me busy, I wanted something fast. I crushed graham crackers, stirred together cheesecake-flavored instant pudding, and layered everything in cups. The result: creamy, fruity parfaits with a crunchy graham base. They’re similar to other no-bake desserts I make with canned pie fillings, but the strawberry flavor felt like a fresh change.

We enjoyed these after a New Year’s meal of smoked lobster and prime rib — they were a light, sweet finish that didn’t feel heavy. They work equally well for Valentine’s Day, family gatherings, or casual entertaining.

What you need for these strawberry parfait cups
- Graham crackers
- Butter
- Cheesecake-flavored instant pudding (or vanilla)
- Canned strawberry pie filling
- Tub of whipped topping
- Fresh strawberries for garnish (optional)
- Parfait cups or plastic cocktail cups

When fresh strawberries are out of season or pricey, canned pie filling is a convenient and delicious alternative. I used cheesecake-flavored instant pudding to give these parfaits a cheesecake-like taste, but vanilla pudding works well too.

How to Make Parfaits
First step — make the graham cracker crumbs (or use pre-made crumbs).
Pulse graham crackers in a food processor or blender until fine, then mix in the melted butter until crumbs are moistened.
Then make the pudding.
Whisk the instant cheesecake (or vanilla) pudding mix with cold milk until thickened, following the package instructions.

Next — assemble!
Layer graham cracker crumbs in the bottom of each cup, add a layer of pudding, then spoon in strawberry pie filling. Finish with a dollop of whipped topping.

Garnish with fresh strawberries and extra graham crumbs if desired. Refrigerate until serving.

Can you use fresh strawberries instead of canned pie filling?
Yes. Chop fresh strawberries and layer them in the parfaits for a lighter, fresher option. Tossing sliced strawberries with a little sugar and letting them sit in the fridge will create a natural syrup. You can also prepare a homemade strawberry topping if you prefer.
How long will these parfaits last?
Stored covered in the refrigerator, they are best within three days. After that, the graham cracker layer may soften and lose its crunch.

- 2 sleeves graham crackers about 1 1/2 cups crumbs
- 3-4 tbsp melted butter
- 1 3.4 oz. box of cheesecake flavored instant pudding or vanilla
